I started my morning off prepping a few Greek Chicken lunches for the week, which I got from: http://www.eazypeazymealz.com/greek-chicken-bowls-meal-prep-easy/
I marinated the chicken over night and followed the recipe pretty close. The only thing I changed was to add the tomatoes and red onion to the cucumber salad. I also garnished each meal with a few Feta Cheese stuffed olives and sprinkled a little bit of Feta on the salads as well.
Later during the day, the kids and I took a break from school to have a colorful snack. Raspberries and mangoes sprinkled with sliced almonds and sunflower seeds. I don't know what it is right now, but I cannot get enough mangoes.
After school, we went on a 3 mile walk/bike ride to enjoy our 40 degree temperatures. Finally, after two months of constant snow on top of snow, our trails have melted off enough for my son to get out his bike and for me to put on my tennis shoes.
We had a pretty good pace going until Maggie wanted to get out and "help" push.
While we were on our walk, I had slow-cooker enchiladas keeping warm. It has a little spice to it, so I paired it with lettuce and tomatoes.

Now that the day is coming to an end, my kids are happily whispering in their living room fort built from couch cushions and blankets. Meanwhile, I'm dreading the pile of dishes waiting for me in the dishwasherless kitchen.
